Butterscotch Ice Cream With Nattu Sakkarai | NO SUGAR | Homemade Ice Cream Recipe - Its special for die-hard ice cream lovers, Its creamy and melts in mouth. Step By Step Images: |
To make the butterscotch praline, heat the jaggery and 2 tbsps of water in a pan, mix and spread it evenly. Cook over medium flame. |
When the jaggery has melted completely and begins to change dark color. |
At this stage to check the caramel consistency, take few drop of the mixture on a plate, it will harder and solidify. |
Turn off the flame immediately, quickly mix the butter. |
Then mix the broken cashews. |
Now the praline is ready |
Pour the praline on a greased plate and cool. |
Then break into small parts. |
Using mortar-pestle, crush into coarse mixture. Keep aside. |
To make the ice cream base (like white sauce), Melt the butter in a pan and then add the wheat flour. |
cook over medium-low heat by stirring constantly, until the mixture turns smooth and bubbly. |
Add the milk and whisk without lumps. |
Bring to boil and cook for about 5 mins |
until creamy consistency. |

Heat the brown sugar and 2 tbsps of water in a pan. |
bring to boil |
Add the fresh cream and unsalted butter. |
Cook over medium heat by stirring constantly for about 1 min. |
Add the prepared ice cream base |
mix well |
Transfer in to a plastic container. Sprinkle the praline on the top and refrigerate for about 6 hrs. |

Notes: If the ice cream mixture is too thick, add some milk. |
