Chicken - 1/2 kg (medium size cut, washed ) |
Turmeric Powder - 1/4 tsp |
Coconut - 2 tbsp (chopped) |
Poppy seeds - 1 tsp |
Cumin seeds - 1 tsp |
Pepper - 1 tsp |
Cloves - 4 nos |
Cardamom - 2 pods |
Star Anise - 1 no |
Cinnamon stick - 3 no (2" long) |
Sambar Onion - 1\2 cup (finely chopped) |
Red Chili Powder - 1 tsp |
Curry Leaves - 2 stks |
Turmeric Powder - 1/4 tsp |
Water - 1 cup |
Oil - 2 tbsp |
Salt to taste. |
Method : |
First pressure cook the chicken pieces with water, turmeric powder and required salt for an whistle and five minutes in simmer. When all the steam has escaped, open the pressure cooker pan and keep aside. |
Mean time grind the coconut, poppy seeds, cumin seeds and pepper into fine paste with required water and keep aside. |
To make the kozhi kari vathakkal, heat the oil in a pan, roast the cinnamon stick, cloves, cardamom and star anise. Add the onion and curry leaves, saute till the onion becomes light golden brown colour. Add the red chili powder and ground paste, saute until its raw smell leaves completely. Finally add the pressure cooked chicken pieces with its water and required salt, cook over medium flame until the water reduced and in a dry consistency. Now the kozhi kari vathakkal is ready. |
Notes: Always open the pressure cooker pan, after its steam released. Grind the mentioned ingredients into fine paste for smooth texture. |
