Ingredients :

Paruthi Vithai | Cotton Seeds - 1 cup
Karupatti | Palm Jaggery - 1 cup
Munthiri | Cashews - 1\4 cup
Arisi Maavu | Rice Flour - 1\2 cup
Ghee - 1\2 cup

Method :

Preparation

  • Wash and soak the paruthi vithai \ cotton seeds for overnight with enough water. (Image 1)
  • To make the raw paruthi paal, grind the paruthi vithai into paste with 2cups of water. (Image 2 and 3)

  • Then extract the paruthi pal using metal siever and keep aside. (Image 4 and 5)
  • Again grind the paruthi solid with 2 to 3 cups of water, extract milk, continue to do until you get clear solids. (Image 6)

Steps To Make The Paruthi Paal Halwa | Cotton Seeds Milk Halwa:

  • To make the karupatti syrup, heat the karupatti and 1\2 cup of water till the karupatti is dissolved in water, filter the karupatti syrup and keep aside. (Image 7)
  • Separately ghee roast the cashews and keep aside. (Image 8)

  • Separately roast the rice flour over simmer and keep aside. (Image 9)
  • To make the halwa, heat the prepared raw paruthi paal in a heavy bottom kadhai and bring to boil. Then add in the roasted rice flour and mix well without lumps. Cook over medium flame for about 5mins. (Image 10 and 11)
  • Add in the filtered karupatti syrup and mix well. (Image 12)
  • Cook and stir continuously to avoid burnt at the bottom.

  • When the paruthi pal mixture becomes thick and reached the halwa consistency means add the ghee little by little and stir well. (Image 13)
  • Finally add the ghee roasted cashews, mix well, cool little and ready to serve. (Image 14 and 15)
