Mustard Seeds - 1\4 tsp |
Urad Dal - 1\4 tsp |
Garlic - 5 cloves (finely chopped) |
Dry Red Chilli - 2 no (1" cut) |
Onion - 1 no (finely chopped) |
Murungai Keerai | Drumstick Leaves - 2 cups (stem removed and washed) |
Turmeric Powder - 1\4 tsp |
Salt - as required |
Eggs - 2 to 3 nos |
Pepper Powder - 1\2 tsp |
Cumin Seeds Powder - 1\2 tsp |
Method : |
Heat the oil in a kadhai, temper the mustard seeds and urad dal. After splutter add the garlic, red chili and onion. Saute until the onion turns translucent. Add the murungai keerai, mix and cook for an minute. |
Add the turmeric powder and required salt. Mix well altogether. Sprinkle 1\4 cup of water (+ or -), mix, cover and cook over simmer, by stirring frequently. |
When the murungai keerai cooks and water reduced fully, add the eggs, pepper powder, cumin seeds powder and required salt (for eggs). Mix well and cook until the eggs cooks fully. |
Serve hot. |
Notes: Don't add more water to cook the keerai. Turmeric powder helps to reduce the keerai's and eggs raw smell. |
