Tender Mutton | Goat Meat | Attu Kari - 250 gm (bone less, 1" cut) |
Water - 1/4 cup |
Oil - 3 tbsp |
Red Chili Powder - 1/2 tsp |
Coriander Seeds Powder - 1/2 tsp |
Cumin Seeds - 1/2 tsp |
Pepper Powder - 1/2 tsp |
Turmeric Powder - 1/4 tsp |
Salt to Taste |
Onion - 1 no (Chopped into 1" square). |
Method : |
Pressure cook the mutton with quarter cup of water and required salt for an whistle and five minutes over simmer only (half cook only). When all the steam has released, open the pan. |
To make the sukka, heat the oil in a pan, add the pressure cooked sukka with its water and cook till the water reduced. Add the red chili powder, coriander seeds powder, cumin seeds powder, pepper powder and turmeric powder, mix well and cook till its raw smell leaves. Add the onion and some salt for onion, cook till the onion turns golden colour and dry like sukka consistency. Sukka is ready and serve hot. |
Notes: Tender mutton cooks fast so one whistle and five minutes is enough to cook. Else cook ten more minutes. Always open the pressure cooker pan, after the steam released fully. |

To make the mutton sukka, heat the oil in a kadai or in a frying pan, add the pressure cooked mutton pieces with its water and cook until the water reduced fully. Then add the red chili powder, coriander powder, cumin seeds, pepper powder and turmeric powder, saute until raw smell leaves. |
Finally add the onion and cook till the onion turns golden colour and dry consistency ie., sukka consistency. Also add some salt for onion in between and cook. Now the mutton sukka is ready and serve hot. |
