Ingredients - To Make The Sigappu Arisi Paniyaram Maavu | Red Rice Paniyaram Batter :

Sigappu Arisi \ Red Rice - 1 cup
Idli Arisi \ Pulungal Arisi - 1 cup
Ulundu \ Urad Dal - 1/4 cup
Vendayam \ Fenugreek - 2 tsp
Kal Uppu \ Salt - required. |

Steps To Make The Sigappu Arisi Paniyaram Maavu | Red Rice Paniyaram Batter :
- Wash and soak the sigappu arisi and pulungal arisi for about two hours with required water. Similarly soak the ulundu and vendayam separately. (Image 1 and 2)

- Drain the water from the soaked ingredients and keep aside.
- To make the batter, using wet grinder, first grind the soaked ulundu and vendayam for about twenty minutes into fine paste with required water. (Image 3 and 4)
- Add in the soaked sigappu arisi and pulungal arisi, grind into very little coarsely paste with required water. (Image 5 and 6)
- Then mix with the required salt.

- To ferment, transfer the ground sigappu arisi paniyaram batter into a bowl, also use large bowl to ferment. (Image 7)
- Set the bowl at a warm place for about eight to ten hours. After ferment, the batter will rise well. (Image 7 and 8)

Vellam \ Jaggery - 1/2 cup (+ or -)
Thengai Thuruval \ Grated Coconut - 1/2 cup
Elakkai \ Crushed Cardamom - 3 nos
Nei \ Ghee - required. |

Steps To Make The Sigappu Arisi Inippu Paniyaram \ Red Rice Sweet Paniyaram :
- To make the paniyaram batter, combine the sigappu arisi paniyaram maavu, jaggery, grated coconut and cardamom, mix well altogether in a bowl. (Image 1 and 2)
( If the jaggery contains impurities, make syrup, filter it and then use)

- To make the paniyaram, heat the oil in a kuzhi paniyaram pan. (Image 3)
- Spoon the required paniyaram batter and cook over medium flame. (Image 4)
- When the side turns golden brown colour, turn and cook till done. (Image 5 and 6)
- Take out the paniyaram, place them on the kitchen towel to absorb excess oil and ready to serve.

Sigappu Arisi Paniyaram Maavu | Red Rice Paniyaram Batter - 2 cups
Mustard Seeds - 1/4 tsp
Urad Dal - 1/2 tsp
Asafoetida - 1/4 tsp
Shallots - 1/4 cup
Green Chilli - 1 no (finely chopped)
Curry Leaves - 1 stk
Coconut - 1/4 cup (grated)
Coriander Leaves - 2 tbsp (finely chopped)
Gingelly Oil - required
Salt to Taste. |

Steps To Make The Sigappu Arisi Kaara Paniyaram Mixture :
- Heat a tablespoon of oil in a hot kadhai, temper the mustard seeds and urad dal. After splutter stir in the asafoetida. (Image 1)
- Add in the shallots, green chilli, curry leaves and required salt, saute and cook till the shallots turn translucent, then cool the mixture completely. (Image 2)
- To make the kaara paniyaram mixture, combine the sigappu arisi paniyaram maavu, shallots mixture, coconut and coriander leaves, mix well and keep aside. (Image 3 and 4)

- To make the kaara paniyaram, heat the oil in a kuzhi paniyaram pan. (Image 6)
- Spoon the required paniyaram batter and cook over medium flame. (Image 7)
- When the side turns golden brown colour, turn and cook till done. (Image 8 and 9)
- Take out the paniyaram, place them on the kitchen towel to absorb excess oil and ready to serve.

Serving Suggestion : Serve the sigappu arisi kaara paniyaram with coconut chutney.
