600 th Post - Paruthi Paal Halwa

Traditional Paruthi Pal Halwa | Healthy Cotton Seeds Milk Halwa !

Ingredients :

Paruthi Vithai \ Cotton Seeds - 2 cups
Karuppatti \ Palm Jaggery - 2 no (medium size)
Cashews - 1/4 cup
Coconut Oil - 1/2 cup
Crushed Cardamom - 2 nos

Method :

Preparation :

  • Wash the paruthi vithai \ cotton seeds for 3 to 4times to remove the impurities.
  • Then soak it for overnight or 8hours. (Image 1)

Steps To Make the Paruthi Paal \ Cotton Seeds Milk (raw) :

  • Grind the soaked paruthi vithai \ cotton seeds with 2 cups of water into paste. (Image 2 and 3)
  • Extract the paruthi paal \ cotton seeds milk using metal sieve. (Image 4 and 5)
  • Again grind the paruthi solids with 2 cups of water, extract the milk, continue to do until you have dry paruthi solids \ cotton seeds solids. (Image 6)

Steps To Make The Paruthi Paal Halwa :

  • Make the karuppati \ palm jaggery syrup with 3/4 cup of water and keep aside. (Image 7)
  • Roast the cashews in the hot coconut oil and keep aside. (Image 8)
  • To make the paruthi paal halwa \ cotton seeds milk halwa, heat the prepared paruthi paal \ cotton seeds milk in a heavy bottom kadhai. (Image 9)
  • Bring to boil, reduce the flame and stir continuously to avoid burnt at the bottom. (Image 9 and 10) (it looks curdle)

  • When the paruthi paal mixture is reduced into 3/4 quantity (almost half an hour), add in the filtered karupatti \ palm jaggery syrup, mix well and continue stirring. (Image 11 and 12)
  • If the mixture is becomes too thick and reached the halwa consistency means, add the coconut oil little by little and mix well and cook until the mixture turns into dark color. (Image 13 and 14)
  • Add in the cardamom and roasted cashews, one by one, mix well and remove from the flame. (Image 16)
  • Cool little and ready to serve.
