700th Post Parampariya Inippu Karupatti Mittai | Cheeni Mittai | Palm Jaggery Mittai recipe, is made from the 3 main ingredient of rice, urad dal and karupatti, is also flavored with sukku podi | dry ginger powder and elakkai podi | cardamom powder. Follow the recipe as below...

Ingredients :

Karuppatti | Cheeni Mittai
Pachai Arisi | Raw Rice - 3\4 cup
Ulundu | Urad Dal - 1\4 cup
Karuppatti | Palm Jaggery - 1 cup
Sukku Podi | Dry Ginger Powder - 1 tsp
Elakkai Podi | Cardamom Seeds Powder - 1\2 tsp (optional)

Method :

Steps To Make The Karuppatti Mittai | Cheeni Mittai | Palm Jaggery Mittai :

  • Preparation, wash and soak the rice and urad dal separately with enough water for over night or atleast eight hour. (Image 1)
  • Then drain the water and discard it.
  • To make the batter, using wet grinder, grind the soaked rice and urad dal into fine paste using very little water. The batter consistency is similar to ulundu vadai batter. (Image 2 and 3)

  • To make the karuppatti | palm jaggery syrup, heat the karuppatti with 1\4 cup of water in a pan, cook till the karuppatti is dissolved completely. Then add the sukku and elakkai podi, mix well and keep aside. (Image 4)
(If the karuppatti syrup is contain impurities, filter the syrup and then use.)

  • To make the karuppatti mittai, heat enough oil in a kadhai to deep fry, using milk cover, fill the batter and cut the edge for small hole ( or use pipping bag with plain hole nozzle ), then make the continuous round design on hot oil and cook over medium flame. (Image 5)
  • Cook on both sides till little crispy (not too crispy and crunchy), soft and also the colour remains unchanged. (Image 6)

  • Transfer them into the karupatti syrup and soak for about 10 to 15 minutes. Transfer into the plate and the karuppatti mittai is ready. (Image 7 and 8)

Steps To Make The Cheeni Mittai | Sugar Mittai :

  • Cheeni mittai is similar to karuppatti mittai recipe, instead of karuppatti syrup use cheeni syrup ( ie., sugar syrup). To make the sugar syrup, heat a cup of sugar with 1\4 cup of water, bring to boil, add the sukku and cardamom powder and mix well.
  • Then immerse the fried thing in the sugar syrup for about 10 to 15 minutes. Then take out from the syrup and ready to serve. (Image 10 and 11)
