Home-made Malai Kulfi - Indian Ice Cream


Ingredients :

Home-made Malai Kulfi - Indian Ice Cream

Milk - 1 litre
Sweet Bread - 2 slices (finely chopped, edges removed)
Sugar - 3/4 cup
Gelatine - 2 tsp (dissolved in 1/4 cup of water)
Almonds - 3 nos (Blanched in hot water for 10mins, skinned,finely chopped)
Cashewnuts - 3 nos (finely chopped)
Pistachios - 5 nos (finely chopped)
Cardamom Seeds Powder - 3 nos
Vanilla Essence - 1/2 tsp (optional)

To Grind into Paste :

Almonds - 10 nos (Blanched in hot water for 10mins, skinned)
Cashewnuts - 10 nos
Milk - 1/4 cup

Method :

Home-made Malai Kulfi - Indian Ice Cream

  • Heat Milk in a wide and heavy Kadai, bring to boil and stir constantly until reduce into half of the quantity.
  • Add Sugar and stir until dissolve.
  • Add Bread pieces and Vanilla Essence, cook for 3mins in medium flame, stirring continuously and remove from flame.

  • In a meantime grind mentioned ingredients into fine paste.
  • Add ground paste into Milk-Bread mixture and mix well.
  • Then add dissolved Gelatine and mix well again.
  • Finally add Cardamom Powder, Chopped Almonds, Cashew-nuts and Pistachios.
  • Let it cool and pour the mixture into the Kulfi-molds or bowls, freeze atleast 6hours or over night.
  • To serve, remove the Kulfi from the molds by running the sharp knife around the edges of the Kulfi and slip into serving plate.
