Ingredients :

Palak - 1 bunch (or Blanched Palak Paste 1 cup)
All Purpose Flour / Maida - 2 cups
Green Chili - 2 nos (or Green Chili Juice 2nos)
Ginger - 1" long (or Ginger Paste)
Cumin Seeds Powder - 1/2 tsp
Sugar - 1 tsp
Salt to taste
Ghee - 2 tbsp
Oil for deep fry.

  • First to make Palak paste, blanch it for 2mins in hot water with sugar and 1/2 tsp of Salt.
  • Then rinse with fresh water.

  • Then grind into fine paste with Green Chili and Ginger.

  • Now to make dough, combine Maida (all purpose flour), Ghee, Cumin Seeds Powder, Salt and Palak paste, mix well and add required water to make soft dough. Let it soak for 20mins.
  • Then make small balls (lemon size). 
  • Parallely heat Oil in a Kadai.

  • And roll into circle, it should not too thin and too thick.
  • Now drop the small piece of dough into the Oil, it should fry up immediately and comes up to the surface, then keep the flame into medium, then drop the Poori /Puri, when it comes up slowly to the surface, gently press it with ladle to puff up, cook for golden brown colour on both side and ready to serve.

Serving Suggestion : Serve hot with Onion Raita
