Vanjaram Meen Varuval | வஞ்சிரம் மீன் வறுவல் | Seer Fish Fry



Ingredients :

Vanjaram Meen Varuval | வஞ்சிரம் மீன் வறுவல் | Seer Fish Fry

Vanjaram Meen / Seer - 250 gm (cleaned, washed)
Egg - 1 no (beaten, required)
Corn flour  - 1 tsp
Bengal Gram Flour / Kadalai Maavu - 1 tsp
Ginger Garlic - 1 tsp
Salt to Taste
Oil for Shallow Fry.

Masala Ingredients :

Dry Red Chili - 3 no
Coriander Seeds - 1 tsp
Tamarind - 1/2 " ball size
Pepper - 1/2 tsp
Cumin Seeds - 1/2 tsp
Fennel Seeds - 1/2 tsp
Curry Leaves - 1 stk
Turmeric Powder - 1/4 tsp 
Oil - 1 tsp
Salt to Taste.

Method :

Steps To Make Fish Masala : (shown in above image)
  • Roast the dry red chili in hot oil for few seconds. (Image 1)
  • Add coriander seeds and again saute for few seconds. (Image 2)
  • Add pepper, cumin seeds, fennel seeds, tamarind and curry leaves, again  saute for few seconds. (Image 3)
  • Remove from the flame and allow to cool completely. (Image 4)
  • Grind into fine paste with turmeric powder, required salt and required water. (Image 5 & 6)

Steps To Marinate the Vanjaram Meen / Seer Fish : (shown in above image)
  • In a bowl, combine ground masala paste, corn flour, gram flour, ginger garlic paste, required egg and little salt, mix well and marinate the fish pieces for about 30min.

Steps To Cook Vanjaram Meen : (shown in above image)
  • Then shallow fry in hot oil on both sides until golden brown colour and ready to serve.

Serving Suggestion : Serve hot with Fish Curry and Rasam.
