Ingredients :

Chicken - 1 no (1 kg, washed, Spatchcock)
Curd - 1 tbsp
Fresh Cream - 1 tbsp
Dry Red Chili - 6 no (blanched)
Garlic - 5 cloves
Pepper - 1/2 tsp
Cumin Seeds - 1/2 tsp (crushed)
Fennel Seeds - 1/2 tsp (crushed)
Brown Sugar - 1 tsp
Soya Sauce - 1 tbsp
Oil - 2 tbsp
Salt to Taste.

Spicy Masala : (1 tsp require)

Cinnamon Stick - 1"
Nutmeg Powder - 1/2 tsp
Fennel Seeds - 1/2 tsp
Cardamom - 6 pods
Cloves - 10 no
Pepper - 3/4 tsp
Mace - 1/2 no

Method :

Steps To Make Spicy Masala :
  • Dry roast the all mentioned ingredients except nutmeg in hot kadai \ frying pan over simmer. (Image 1)
  • Remove from the flame, add in nutmeg powder and mix well, allow to cool them completely. (Image 2)
  • Grind into powder, sift them and the store in a air-tight container. (Image 3 and 4). This recipe required 1 tsp only.

Steps To Make Spicy Masala Chicken Roast :
  • Grind blanched red chili, garlic, cumin seeds, fennel seeds, pepper, brown sugar, soya sauce, spicy masala and required salt. (Image 1)
  • Add curd and fresh cream and again grind into fine paste. (Image 2 and 3)

  • Marinate the whole chicken with ground masala paste for overnight or 24hrs in the fridge. (Image 4 and 5)
  • Bake the marinated chicken for 15 to 20minutes on both sides or until cooks at preheated - 220 degree Celsius in oven.

Serving Suggestion : Serve with Biryani or Naan.
