Adai is one of the type of dosai (ie., Indian crepe), is made from lentils and rice. Today I have made usual adai with the twist of murungai keerai \ drumstick tree leaves. |
Murungai Keerai \ Drumstick Leaves - 1 and 1/2 cup
Kadalai Paruppu \ Split Bengal Gram - 1/4 cup
Thuvaram Paruppu \ Split Red Gram - 1/4 cup
Idly Rice - 1/2 cup
Shallots - 12 to 15 no
Coconut - 1/2 cup (grated)
Dry Red Chilli - 2 no
Fennel Seeds - 1/2 tsp
Oil - required
Salt to Taste. |
Preparation :
- Soak the rice and dals (kadalai paruppu \ split bengal gram & thuvaram paruppu \ split red gram) together with enough water in a bowl for an hour. (Image 1)

Steps To Make The Murungai Keerai \ Drumstick Leaves Greens Adai :
- To make the adai batter, grind the soaked rice and dals with dry red chilli, required salt and little water into coarsely. (Image 2 and 3)
- Then add in the shallots, coconut and fennel seeds, again grind little and transfer into a bowl. (Image 5)

- Mix the murungai keerai \ drumstick leaves into the ground mixture, mix all and the adai batter is ready.
- To make the adai, heat iron tawa, take a laddle ful of batter, pour in the center and tilt into circle. (Image 8)
- Add some oil, when the side turn brown colur, flip and cook over simmer and ready to serve. (Image 8 and 9)
- Do the same for the remaining batter.

Serving Suggestion : Serve hot with the Sambar and Coconut Chutney. |
