Ingredients :

Mutton | Lamb Ribs - 400gm
Badam | Almond - 50 gm
Cinnamon Stick - 2" long
Cloves - 3 nos
Cardamom - 3 nos
Bay Leaf - 1 no
Shallots or Large Onion - 3/4 cup (chopped)
Green Chili - 2 no
Ginger Garlic Paste - 1 tsp
Cumin Seeds Powder - 1 tsp
Garam Masala - 1/2 tsp
Red Chili Powder - 1/2 tsp
Turmeric Powder - 1/4 tsp
Rose Essence - 1/2 tsp
Coriander Leaves - 2 tbsp (chopped)
Butter -  2 tbsp + 2 tbsp
Salt to Taste.

To Marinate :

Curd - 1/2 cup (+ or -)
Raw Papaya Paste - 1/4 cup
Ginger Garlic Paste - 1 tsp
Red Chili Paste - 1 tsp
Garam Masala - 1/2 tsp
Turmeric Powder - 1/4 tsp
Salt To Taste.

Method :

Preparation: :

  • To marinate, mix the mutton chops with the mentioned ingredients in a mixing bowl and refrigerate for about 8hours or overnight. (Image 1 and 2)

Steps To Make The Mutton Chops | Lamb Ribs Dhaba Style Gravy :

  • To make the badam \ almond paste, boil a cup of water, add in the badams and cook for about 5mins over simmer. (Image 3)
  • Then cool the badams and peel off the skin. Grind into fine paste with required water and keep aside. (Image 4 and 5)

  • To make the mutton chops \ goat ribs gravy, heat two tablespoon of butter in a hot kadhai, roast the cinnamon stick, cloves, cardamom pods and bay leaf. (Image 6)
  • Add in the onion and green chili, cook till the onion turns golden colour. (Image 7 and 8)
  • Cool the onion mixture, grind into fine paste and keep aside. (Image 9)

  • Heat the remaining butter in the same kadhai and stir in the ginger garlic paste for few seconds. (Image 10)
  • Stir in the ground onion mixture paste for an minute. (Image 11)
  • Stir in the red chili powder, garam masala and turmeric powder for few seconds. (Image 12)
  • Add in the marinated mutton chops and cook for about 5 minutes. (Image 13)

  • Add in the badam paste and mix well. (Image 14)
  • Add in the two cups of water and required salt (already some salt is marinated with the mutton chops), mix well and bring to boil. (Image 15)
  • Cook for about an hour (+ or -) over simmer until the mutton chops turns soft, also by stirring frequently in between. Then add the rose essence and mix well. (Image 16)
  • Finally add the coriander leaves, mix well and ready to serve.

Serving Suggestion: Serve hot with the Tamilnadu Layered Parotta, Naan or Chapathi.
