Ingredients :

Cauliflower | Pookosu - 1 small no
Turmeric Powder - 1\4 tsp
Pepper - 1 tsp
Cloves - 2 no + 2 no
Cinnamon Stick - 1" + 1" long
Fennel Seeds - 1 tsp
Shallots | Sambar Onion - 10 to 12 no
Green Chili - 2 no
Cashews - 1\4 cup
Crushed Ginger Garlic - 1 tsp
Coriander Leaves - 2 tbsp
Oil - 1 tablespoon + 2 tablespoon
Salt to Taste.

Method :

Steps To Make The Creamy Cashew Cauliflower Veg Gravy | Pookosu Munthiri Gravy:

  • First, boil 2 cups of water with turmeric powder and some salt, then immerse the cauliflower for about 5mins and keep aside. (Image 1)
  • To make the gravy, dry roast the pepper, 2 cloves, 1" cinnamon stick and fennel seeds, keep aside to cool. (Image 2)
  • Then heat a tablespoon of oil, add in the shallots and green chili, saute until the shallots turns light brown colour. (Image 3)
  • Add in the cashews, saute for few seconds and cool them completely. (Image 4)
  • Grind the roasted spices into powder, add in the shallots-cashews mixture and grind into fine powder with required water, keep aside. (Image 5, 6 and 7)

  • Heat remaining oil in a same kadhai, roast the remaining cloves and cinnamon stick. Add in the ginger garlic paste and stir for few seconds. (Image 8)
  • Add in the ground shallots-cashews mixture and stir for few seconds. (Image 9)
  • Add one and half cup of water and required salt, bring to boil. (Image 10)
  • Add the cauliflower, cover and cook for about 10 minutes over medium flame, by stirring frequently. (Image 11)
  • Finally add the coriander leaves, mix gently and ready to serve.
