One Large Coconut flesh \ White Part |
Water - 2 cups + 2 cups |
Method : |
To make the coconut milk, grind the coconut flesh with two cups of water. Using thin cloth, extract the coconut milk by squeezing it with your hands. Keep a bowl under the cloth to collect the coconut milk. Then again grind the coconut flesh with the remaining two cups of water and extract the coconut milk. Discard the solids. |
Refrigerate the coconut milk for about twelve hours or overnight. |
The next day, coconut cream will floats on top. Using ladle, take out the floating cream and place in a iron kadhai (can also use brass urali (vessel) or thick bottom pan) |
Heat the kadhai over low-medium flame. Keep stirring it frequently to avoid burning. When the mixture turns brownish and the oil is separated, turn off the flame. |
Let it cool down. |
Then using thin cloth or strainer, collect the oil. That's all. |
Store in a airtight bottle up to six to eight months. |
Notes: Use fresh coconut milk. Keep stirring frequently to avoid burning. |
