Tomato Rice with Coconut Milk


Ingredients :

Tomato Rice with Coconut Milk

Large Tomatoes - 2 nos (chopped)
Thick Coconut Milk - 1 cup
Basmati Rice - 1 cup (soak 20mins)
Large Onion - 1 no (chopped)
Ginger and Garlic - 1 tsp (crushed or paste)
Cinnamon Stick - 2 nos (2" long)
Cloves - 3 nos
Cardamom - 2 nos
Green Chili - 2 nos (chop into 2" long)
Red Chili Powder - 1/2 tsp
Turmeric Powder - 1/4 tsp
Mint Leaves - 1/2 cup
Coriander Leaves - 1/2 cup (chopped)
Oil - 1 tbsp
Ghee - 1 tbsp
Water - 3/4 cup
Salt to Taste.

Method :

Tomato Rice with Coconut Milk

  • Heat Oil and Ghee in a Pressure Cooker, roast Cinnamon Stick, Cardamom and Cloves.
  • Add Onion and saute until light golden colour.
  • Add Ginger & Garlic paste, saute until raw smell leaves.
  • Add Tomato and Green Chili, stir well until tomato smash well.

  • Add Red Chili Powder and Turmeric Powder, saute until raw smell leaves.
  • Add Mint and Coriander Leaves stir well for an minute.
  • Add soaked Basmati Rice and stir well for few seconds.

Tomato Rice with Coconut Milk

  • Now add Coconut Milk and required Salt, stir well and bring to boil.
  • Then close the lid and cook for 1 whistle and 5mins in low flame.
  • When all the steam has escaped, open Pressure Cooker, stir well and ready to serve.

Tomato Rice with Coconut Milk

Serving Suggestion : Serve hot with Onion Raita, Hard Boiled Egg and Fried Bread.
