Chandrakala Sweet | சந்திரகலா இனிப்பு - Diwali Sweet



Ingredients :

Chandrakala Sweet | சந்திரகலா இனிப்பு - Diwali Sweet

For Dough :

Maida / All Purpose Flour - 1 and 1/2 cup
Cooking Soda - 2 pinch
Ghee / Butter - 1 tbsp
Salt - 1 pinch
Food Colour - Orange (liquid, optional)

For Stuff :

Milk - 1 liter (to make khoya)
Sugar - 1/4 cup
Cardamom Powder - 1/2 tsp
Nuts - 1/4 cup (cashew-nuts, almonds, raisins, chopped)

For Sugar Syrup :

Sugar - 1 cup
Water - 1/2 cup
Cardamom Powder - 1/2 tsp

Method :

Steps To Make Homemade Sweetened Khoya : (shown in above image)
  • Heat a liter of milk in a heavy bottom utensil or non-stick pan, bring to boil. (Image 1)
  • Reduce the flame into medium and cook til dry lump (not too dry),  stirring continuously. (Image 2)
  • Add sugar and cook til the moisture has reduced completely, ie., khoya consistency. (Image 3)
  • Remove from the flame and add cardamom powder, mix well and keep aside. (Image 3 & Image 4)

Steps To Make Chandrakala Sweet Dough :
  • In a bowl, combine maida, salt, soda, food colour and ghee, mix well. (Image 1 and 2)
  • Add required water and knead into soft dough in a poori / puri dough consistency. (Image 3)
  • Set aside for half an hour.

Steps To Make Sugar Syrup :
  • Meantime, boil water in a pan, add sugar and dissolve it.
  • Cook till one-thread consistency. (Image 4).
  • Add cardamom powder, mix well and keep aside.

Steps To Make Chandrakala :
  • Divide the dough into small balls approximately 20 to 25.
  • Flat into circle using rolling pin like puri / poori. (Image 5)
  • Place a spoon of sweetened khoya in center with some nuts. (Image 6)
  • Fold it and gently press the edges to seal. (Image 7)
  • Twist the edges. (Image 8)
  • Do the same for the remaining and keep aside.

  • Deep fry in hot oil in medium flame til golden brown colour. (Image 14)
  • Dip in hot sugar sygar for about 5 minute and keep aside.
  • Do the same for the remaining and ready to serve.
  • Store in a air-tight container.

Serving Suggestion : Serve with Kuthiraivali Murukku and Rava Ladoo.
