Fried Chicken Cashew-nuts Masala Gravy

Ingredients :

Chicken - 500 gm
Onion - 2 no (finely chopped)
Cashew-nuts - 1/4 cup
Tomato - 1 no (large, chopped)
Shallots - 1/4 cup
Ginger - 1 tsp (finely chopped)
Garlic - 1 and 1/2 tsp (finely chopped)
Cloves - 3 no
Star Anise - 1 no
Cinnamon Stick - 2 no (2" long)
Red Chili Powder - 1 and 1/2 tsp
Coriander Seeds Powder - 1 and 1/2 tsp
Turmeric Powder - 1/4 tsp
Cumin Seeds Powder - 1/2 tsp
Pepper Powder - 1/2 tsp
Coriander Leaves - 2 tbsp (chopped)
Oil - 1/2 cup
Water -1 cup
Salt to Taste.

To Marinate :

Ginger Garlic Paste - 1/2 tsp
Red Chili Powder - 1 tsp
Cumin Seeds Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Salt to Taste.

Steps To Make Fried Chicken Cashews Gravy :

  • First marinate the chicken pieces with mentioned ingredients for minimum half an hour. (Image 1 and 2)
  • Shallow fry them in hot oil and keep aside. (Image 3 and 4)

  • Meantime, heat tablespoon of oil in a kadai \ frying pan, saute shallots till light brown colour. (Image 5)
  • Add in cashew-nuts and tomato and saute till the tomato becomes tender and allow to cool completely. (Image 6)
  • Then grind into fine paste and keep aside. (Image 7 and 8)

  • To make the gravy, roast the cloves, cinnamon stick and star anise in chicken fried oil. (Image 9)
  • Add onion and saute till light brown color. (Image 10)
  • Add ginger and garlic, saute till its raw smell leaves. (Image 11)
  • Add red chili powder, cumin seeds powder, coriander seeds powder, turmeric powder and pepper powder, saute for few seconds. (Image 12)

  • Add ground cashew-nuts mixture paste and saute for half a minute. (Image 13)
  • Pour water and bring to boil. (Image 14)
  • Add fried chicken pieces, mix well and cook over simmer for about 7 to 10minutes. (Image 15 and 16)
  • Finally add coriander leaves, mix well and ready to serve.

Serving Suggestion :

Serve hot with Naan, Chapathi or Parotta.
