Ingredients :

Samai \ Little Millet - 1 and 1/2 cup
Butter - 60 gm
Banganapalli Mango Paste - 1/4 cup
Demerara Sugar - 1/2 cup
Baking Powder - 1/4 tsp
Cooking Soda - 1/8 tsp
Egg Yolk - 1 no
Sugar \ Choco Chips - required

Method :

Steps To Make The Samai \ Little Millet Mango Cookies :

  • Melt the butter in the kadhai. (Image 1)
  • Add in the mango puree and demerara sugar, cook over simmer until the sugar melts. (Image 2 and 3)
  • Then cool the mango mixture completely. 
  • To make the mango cookies dough, In a mixing bowl, mix the samai flour, baking powder and cooking soda. (Image 4)
  • Then add in the cooled mango mixture and egg yolk, mix well and knead into soft dough, if the dough is too sticky, add some samai flour. (Image 5 and 6)
  • Refrigerate the dough for 15mins.
  • To make the cookie, pre-heat the oven at 180 degree Celsius.
  • Make small balls out of the dough and flat into thin circle for about 1/4 inch thickness, sprinkle some sugar on top and gently press it.
  • For choco chips \ nuts cookies, mix some choco chips \ nuts into required dough.
  • Bake in the greased dish for 15 to 18 minutes or til golden color. (Image 7 and 8)
  • Cool the cookies on rack and store in a air-tight container box.
Serving Suggestion : Sand-witch the cookies with mango-icing too.
