For Pav | Bun:


Flour | All Purpose Flour - 1 and 1\2 cup
Active Dry Yeast - 2 tsp
Butter - 1 tbsp
Sugar - 1 tsp + 2 tbsp
Lukewarm Water - 1\2 cup + extra
Salt - required
Milk - brush.

For Pav Bhaji | Gravy:


Carrot - 1\2 cup (chopped)
Peas - 1\2 cup (chopped)
Capsicum - 1\2 cup (chopped)
Potatoes - 3 nos
Large Onion - 1 no (finely chopped)
Ginger Garlic Paste - 1 tsp
Tomato - 2 no (finely chopped)
Red Chili Powder - 1 tbsp
Pav Bhaji Masala - 2 tbsp
Coriander Leaves - 2 tbsp
Oil - 2 tbsp
Butter - 2 tbsp + extra
Salt to Taste.

Method :

Steps To Make The Pav | Bun:

  • To proof the active dry yeast, take half a cup of lukewarm water, add in the yeast and a teaspoon of sugar, mix vigorously until the yeast dissolved some what. Then cover and leave for 10 to 15 mins, after that if the yeast mixture becomes foamy means it is ready to use. (Image 1)
  • To make the pav bun dough, In a mixing bowl, mix the flour, remaining sugar, butter and salt. (Image 2)
  • Add the yeast mixture and mix well, then add the required water and knead into soft dough. (Image 3 and 4)
  • Transfer the dough into a greased bowl, cover with cling flim and set at warm place for about 30 minutes until its double in size. (Image 5 and 6)

  • Punch down the dough, then divide into 8 equal parts and roll into ball shape. Arrange the dough on the greased baking dish. (Image 7)
  • Again set the dough at warm place until double its size. (Image 8)
  • Preheat the oven at 180 degree Celsius, bush some milk on the dough and bake for about 30 minutes until the top turns golden brown colour. Cool the bun on the wire rack. (Image 9)

Steps To Make The Pav Bhaji Masala:

  • In a bowl, add the carrot, beans, capsicum, required salt and a cup of water, mix well and pressure cook for 1 whistle and 5 minutes over simmer. (Image 1 and 2)
  • When all the steam has released and open the pan. Then mash all the vegetables well with masher and keep aside. (Image 3)
  • Then pressure cook the potatoes with a cup of water for 1 whistle and 5minutes over simmer. When all the steam has released and then open the pan. Peel off the skin and smash without lumps while hot, keep aside. (Image 4 and 5)

  • To make the pav bhaji gravy, heat the oil in a kadhai and saute the onion until light brown colour. Then add the ginger garlic paste and saute till its raw smell leaves. (Image 6)
  • Add in the tomatoes and saute until the tomatoes turns tender. (Image 7)
  • Stir in the red chili masala, pav bhaji masala and required salt for few seconds. (Image 8)
  • Then add the mashed vegetables and mashed pototes, mix well. (Image 9)

  • Again mash well and cook for about 5 to 7 minutes. (Image 10)
  • Then add the coriander leaves and mix well. (Image 11)
  • Finally add the butter, mix well and the gravy is ready. (Image 12)
  • To serve, slice the prepared pav, toast with some butter and serve with the gravy. (Image 13)
