Ingredients :

Vallarai Keerai Adai
Vallarai Keerai - 1 cup
Idli Arisi - 1\2 cup
Pachai Arisi - 1\2 cup
Kadalai Paruppu | Begal Gram - 1\4 cup
Thuvaram Paruppu | Toor Dal - 1\4 cup
Dry Red Chili - 2 no
Fennel Seeds - 1 tsp
Asafoetida - 1\4 tsp
Sambar Onion | Shallots - 1\2 cup
Grated Coconut - 1\2 cup
Salt to Taste.

Method :

Steps To Make The Vallarai Keerai Adai:

  • Preparation, wash and soak the idli arisi, pachai arisi, kadalai paruppu thuvaram paruppu and dry red chili for about two to three hours with enough water. Drain the water and keep aside. (Image 1)

  • To make the vallarai keerai adai batter, grind the soaked ingredients with fennel seeds, asafoetida, required salt and required water into little coarsely. (Image 2 and 3)
  • Then add the vallarai keerai, onion and coconut, again grind till combined. (Image 4 and 5)
  • Transfer the ground batter into a bowl, if the batter is too thick, add some water, mix well and keep aside.

  • To make the adai, heat the iron tawa, pour a ladle-full of batter or required batter in the center and spread into circle for about 1\4 inch thickness. (Image 6 and 7)
  • Then make some holes with spoon and add one or two teaspoon of oil. (Image 8 and 9)

  • Cover and cook over simmer. When the side turns golden colour, flip and cook until the brown spots appear. (Image 10, 11 and 12)
  • Ready to serve.
  • Do the same for the remaining batter.
