2016 Bakrid Special Recipe - Mutton Rogan Josh | Attu Kari Kuzhambu in a easy pressure cooking method. It is Kashmir cuisine recipe and very familiar in all over India and other countries too. This dish is based on the two main ingredient of tomato puree and red chili paste. For that don't use chopped tomato, tomato paste, can tomato puree, red chili powder and green chili. So use fresh tomato puree and fresh red chili paste for best taste. This dish requires few whole spices and few masala's only. That's help to differentiate from the other curries. Bangalore Tomato - 3 no |
Cinnamon - 2" |
Cloves - 3 no |
Bay Leaf - 1 no |
Onion - 1 no (finely chopped) |
Ginger Garlic Paste - 1 tsp |
Turmeric Powder - 1\4 tsp |
Garam Masala - 1 tsp |
Cumin Seeds Powder - 1 tsp |
Coriander Leaves - 1 tbsp (finely chopped) |
Oil - 2 tbsp |
Salt To Taste. |

Steps To Make The Mutton Rogan Josh | Attukari Kulambu:To make the red chili paste, heat a cup of water, bring to boil, add in the dry red chilies and cook for about 10minutes over simmer. Then drain the water and grind the chilies into fine paste with required water, keep aside.To make the tomato puree, mark the skin into X cut at the tomato bottom, boil the tomato with required water until the skin slightly peel off from the tomato. Then cool little and peel off the tomato skin. Then grind into fine paste and keep aside. |
To make the mutton rogan josh, heat the oil in a pressure cooker pan and roast the cinnamon stick, cloves and bay leaf. Add the onion and saute till the onion turns slightly golden colour. Add the ginger garlic paste and saute till its raw smell leaves completely. Add the mutton pieces and saute till its moisture reduced. Then add the turmeric powder, prepared red chili paste, garam masala and cumin seeds powder, mix well for few seconds. |
Add the tomato puree and required salt, saute for an minute. Add one and half cup of water, mix well and bring to boil. Cover and pressure cook for an whistle and 15 minutes to 20 minutes over simmer. When all the steam has escaped and then open the pressure cooker pan. Finally add the coriander leaves, mix well and ready to serve. |
My Notes: If the mutton is not cooked means, again pressure cook for an whistle. Red chili paste and tomato puree is important for unique taste. So don't use red chili powder and tomato paste.
