Deepavali Special Recipe - South Indian Cuisine - Mutton Sukka | Attu Kari Sukka with crunchy coconut and cashews. Already I posted more mutton sukka recipe, but this dish is little differ from all. For this I am used coconut and lemon juice, these two ingredients are made the dish tasty. Now lets see how to make this mutton sukka recipe with easy step by step images and instructions. Follow the recipe as below...

Ingredients :

Sukka
Mutton | Attu Kari - 1\2 kg (boneless, 1")
Red Chili Powder - 1 tsp + 1\2 tsp
Coriander Seeds Powder - 1 tsp
Garam Masala - 1 tsp
Turmeric Powder - 1\4 tsp + 1\4 tsp
Ginger Garlic Paste - 1 tsp
Ginger - 1 tsp (finely chopped)
Garlic - 1 tsp (finely chopped)
Green Chili - 1 no (finely chopped)
Dry Red Chili - 2 no
Coconut - 2 tbsp (sliced, 1" long)
Cashews - 2 tbsp
Curry Leaves - 1 stk
Shallots | Sambar Onion - 1\2 cup (chopped)
Pepper Powder - 1\2 tsp
Lemon Juice - 1 no
Coriander Leaves - 1 tbsp (finely chopped)
Ghee - 2 tbsp
Oil - 2 tbsp
Salt To Taste.

Steps To Make The Mutton Sukka | Attu Kari Sukka:

First marinate the mutton pieces with a teaspoon of red chili powder, garam masala, quarter teaspoon of turmeric powder, ginger garlic paste and required salt in a bowl for half an hour.
Then pressure cook the marinated mutton with a cup of water for an whistle and 15 minutes over simmer. When all the steam has released, open the pan and keep aside.

To make the sukka, heat the ghee and oil in a kadhai, add the ginger, garlic, green chili, dry red chili, coconut, cashews and curry leaves. Saute until the cashews turns slightly golden colour. Add the onion and saute until slightly golden colour. Add the remaining red chili powder, turmeric powder, pepper powder and some salt, stir for few seconds. Add the pressure cooked mutton with its water, mix well altogether. Then cook over medium flame till dry ie., sukka consistency and turn off the flame. Add the lemon juice and mix well. Finally add the coriander leaves, mix gently and ready to serve.

Serving Suggestion: Serve the mutton sukka with the mutton curry and rasam.
