Honey Cake | Children's Day Special Cake - My childhood favorite honey cake, yet it is one of the familiar cake in Chennai bakery's. Actually it a vanilla sponge cake, soaked with honey sugar syrup, topped with mixed fruit jam and the sides are coated with desiccated coconut. It is very easy to make at home and it melts in mouth at every bite. Now lets see how to make this delicious Indian bakery style honey cake with simple ingredients, step by step images and instructions.

Ingredients :

Maida - 1 cup
Baking Powder - 1\2 tsp
Cooking Soda - 1\4 tsp
Unsalted Butter - 80 gm
Powdered Sugar - 1\2 cup
Large Egg - 2 no
Vanilla Essence - 1 tsp
Sugar - 1\4 cup
Honey - 1\4 cup
Mixed Fruit Jam - required, beaten
Desiccated Coconut - required
Method :

Steps To Make The Honey Cake:

Preparations, grease and dust the 7" cake tin, keep aside. Sieve the maida, baking powder and cooking soda for 2 to 3 times, keep aside. Then pre-heat the oven at 180 degree Celsius.
To make the cake batter, in a mixing bowl, beat the butter and powdered sugar till creamy with an electric beater or whisk. Beat in the eggs, one by one until well combined. Add the vanilla essence and beat till combined. Add the sieved maida flour mixture and fold gently. If the batter is too thick means add some milk and mix gently. And the cake batter is ready to bake. Transfer the batter into the prepared baking cake tin and tap on the floor to spread the batter evenly.
Bake for 30 to 35 minutes or till the top turns golden brown colour. To check, insert a toothpick in the center, it should comes out clean. Else again bake the cake for 5minutes more. Then cool the cake completely.
To make a honey syrup, heat one and half cup of water and quarter cup of sugar and cook till the sugar melts. Turn off the flame and add the honey, mix well and cool the honey syrup, keep aside.
Cut the cake into 2" square, then pour the honey syrup and allow to absorb ten minutes. Then apply the jam evenly on top. Take out the cake pieces carefully, then roll the sides on desiccated coconut and the honey cake is ready.
My Notes: Beat the jam with spoon, then you can easily on cake. Consume the cake with in two days because desiccated coconut is used. 
Serving Suggestion: Serve the honey cake with ice cream or whipped cream.
