Steps To Make The Karumbu Chaaru Thinai Pongal:

To make the karumbu chaaru, using knife remove and discard the outer skin. Then cut the karumbu into small pieces, grind into paste with a cup of water. Using metal strainer, filter the karumbu chaaru and discard the solids. Then measure the juice.
Pongal
To make the karumbu chaaru thinai pongal, heat the juice and water (totally 5 cups) together in a pongal pot. Bring to boil. Add the washed thinai arisi and pasi paruppu, cook over lower flame for about 20minutes till the paruppu turns soft. Parallely make the jaggery syrup with half a cup of water. Also roast the cashews and raisins with two tablespoon of ghee and keep aside.
Pongal
Once the paruppu cooked and water reduced, filter the jaggery syrup into the pot and cook till pongal consistency. Then add the dry ginger powder and cardamom powder, mix well. Then add the ghee roasted cashews, raisins and grated coconut, mix well. Finally add the remaining ghee, mix well and the pongal is ready.

My Notes: While cooking the thinai and pasi paruppu, keep stir frequently to avoid sticking. If the paruppu is not cooked and water reduced means, add some boiling water and continue the cooking as usual. Also most of the jaggery contains impurities, for that make jaggery syrup and then use.
Serving Suggestion: Serve the karumbu chaaru thinai pongal with the methu vadai.
