Vanjaram Meen Varuval | Seer Fish Fry - made with very simple ingredients and shallow fry method. Most of the time, masala will separate from the fish while frying. To avoid that I used cornflour to seal the masala, it also helps crunchy for the outer layer. Similarly you can try with chicken and paneer also. Vanjaram Meen - 500gm (sliced) |
Red Chili Powder - 3 tsp |
Pepper Powder - 1 tsp |
Lemon Juice - 1 no |
Salt - required |
Oil - required |
Cornflour - 1\4 cup |

Notes: Cornflour helps to seal the masala on fish. Also use oil to make the masala paste and don't use water. |

To make the masala, take a mixing bowl, add the red chili powder, pepper powder and required salt, mix well. Add required oil and make thick paste consistency. Don't add water. |
First apply lemon juice on the each fish slices. Then apply the prepared masala on all sides. Rest it for at least thirty minutes. |
Take a plate, spread the corn flour, then gently tap the fish slices on both sides, remove the excess flour by shaking. After that shallow the fishes with required oil and serve hot. |
