Dry Red Chilies - 3 to 4 nos |
Coriander Seeds - 1 and 1\2 tsp |
Whole Pepper - 1 tsp |
Cumin Seeds - 1 tsp |
Cinnamon Stick - 2" |
Cardamoms - 2 nos |
Cloves - 3 nos |
Gingelly Oil - 2 tbsp |
Sambar Onion - 3\4 cup (chopped) |
Crushed Ginger Garlic - 1 tbsp |
Mutton - 250 gm (bone less, small pieces) |
Turmeric Powder - 1\2 tsp |
Salt to Taste |
Corinader Leaves - 2 tbsp (finely chopped) |
Method : |
To make the masala, dry roast the dry red chilies, coriander seeds, pepper, cumin seeds, cinnamon stick, cardamoms and cloves over simmer. Cool them and grind into powder, keep aside. |
To make the mutton sukka, heat the oil in a pressure cooker pan, add the sambar onion and saute until its turn slightly golden colour. Add the crushed ginger garlic, saute until its raw smell leaves. Add the mutton pieces and turmeric powder, mix well and cook until its moisture reduced. Then add the required salt and half cup of water, mix well. Close the lid with whistle. |
Cook for one whistle over high flame and fifteen minutes over low flame. When all the steam has released, open the pan. |
Add the roasted masala, cook until dry. Finally add the coriander leaves, mix well and serve hot. |
Notes: If the mutton is not cooked means, cook one more whistle. Always open the pressure cooker pan, after the steam released fully. |
