2020 Ramzan Special Nargisi Kofta | Mughlai Cuisine | Egg Mutton Kofta and Gravy

Nargisi Kofta is an extremely popular and rich exotic mughlai dish. It is a combination of boiled eggs stuffed inside mutton keema balls and rich cashew onion cream based gravy.

It goes well with garlic butter naan, chapathi and even with ghee rice.

Recipe :

Ramzan Special Nargisi Kofta | Mughlai Cuisine | Egg Mutton Kofta And Gravy

Ingredients :


For Kofta


Ghee - 2 tsps
Ginger - 1 tsp (chopped)
Garlic - 4 cloves (chopped)
Onion - 1 no (chopped)
Green Chilies - 2no
Mutton - 300 gms (boneless)
Cumin Powder - 1\2 tsp
Garam Masala Powder - 1\2 tsp
Turmeric Powder - 1\4 tsp
Salt - as required
Maida - 2 tbsps (+ or -)
Cornflour - 2 tbsps (+ or -)
Boiled Eggs - 4 nos
Oil for fry

For Gravy


Cashews - 15 to 20 noa (soaked 30mins   in hot water)
Onion - 1 no (sliced)
Ghee - 1 tbsp
Cumin Seeds - 1\2 tsp
Crushed Ginger Garlic - 1 tbsp
Turmeric Powder - 1\4 tsp
Red Chili Powder - 1 tsp
Cumin Powder - 1 tsp
Garam Masala - 1\2 tsp
Water - 1\4 cup
Curd - 1\2 cup
Milk - 1\2 cup
Salt - needed
Sugar - 1 and 1\2 tsp
Dried Kasoori Methi - 1 tsp
Fresh Cream - 1\2 cup
Coriander Leaves - 1 tbsp (finely chopped)
Method :
For Kofta
Heat the ghee in a pressure cooker pan, add the ginger and garlic, stir few seconds. Add the onion and green chili, saute until slightly golden colour.
Add in the mutton and cook until its water reduced. Add the cumin powder, garam masala powder, turmeric powder and required salt. Stir well.
Add half a cup of water and mix well.
Pressure cook for one whistle and ten mins over low flame. When all the steam has released, open the pan and let cool the mixture completely.
Grind into paste. If required add some water.
To make the kofta, mix the ground mutton mixture, maida and corn flour in a bowl. Take some kofta mixture and stuff the egg, ensure all sides are covered well.
Shallow fry or deep fry the kofta's in the oil until brown color.
Cut into halves and keep aside.
For Gravy
To make the gravy masala, Deep fry the sliced onion until brown colour. Let it cool them completely. Grind the soaked cashews and brown onion into fine paste with required water and keep aside.
Heat the ghee in a khadai, add the cumin seeds, after crackled, add the crushed ginger garlic, saute until its raw smell leaves.
Add in the turmeric powder, red chili powder, cumin powder and garam masala, stir few seconds.
Add quarter cup of water, mix and bring to boil.
Add the ground paste, curd and milk. If the gravy is too thick, add some water or milk in this stage. Mix and cook for about two to three minutes by stirring frequently.
Add the required salt and sugar, mix well
Add the kasoori methi and mix well.
Add the fresh cream and mix well.
At last add the coriander leaves and mix well.
Ready. Serve the gravy and kofta together.
Notes: Mutton cooking time may vary. Adjust the sweetness and spices as per ur taste. Serve hot.
