Ingredients :

Palaa Kottai \ Jack Fruit Seeds - 25 to 30 no
Cloves - 3 no
Cinnamon Stick - 2" long
Cumin Seeds - 1 tsp
Fennel Seeds - 1 tsp
Pepper - 1 tsp
Dry Red Chilli - 1 no
Cashews - 10 no
Ginger - 1/2 " (grated)
Garlic - 6 cloves (crushed)
Shallots \ Sambar Onion - 1/3 cup
Curry Leaves - 1 stk
Turmeric Powder - 1/4 tsp
Oil - 3 tbsp
Salt To Taste.

Steps To Make The Palaa Kottai Sukka \ Jack Fruit Seeds Sukka :

  • Pressure cook the palaa kottai for 1 whistle and 5minutes over simmer with a cup of water and required salt. When all the steam has released, drain the water and cool the palaa kottai. (Image 1)
  • Then remove the palaa kottai skin, slice length wise them and keep aside. (Image 2)

  • To make the sukka masala, dry roast the cloves, cinnamon stick, cumin seeds, fennel seeds, pepper, dry red chilli and cashews. (Image 3)
  • Cool and grind the roasted masala coarsely, keep aside. (Image 4 and 5)

  • To make the sukka, heat oil in a kadhai \ pan, stir in the ginger and garlic till its raw smell leaves. (Image 6)
  • Add in the shallots and curry leaves, cook until the shallots turn light brown color. (Image 7)
  • Stir in the cooked palaa kottai and turmeric powder. (Image 8)
  • Stir in the ground masala. (Image 9)
  • Add half a cup of water, cover and cook till the water reduced and dry. Palaa kottai masala sukka is ready to serve. (Image 10 and 11)

Serving Suggestion : Serve hot with the Sambar and Curd Rice
