Vazhakkai Fingers Varuval | Raw Banana Fingers Fry is made with the freshly ground masala paste. Ripen red chili is used specially in the masala. If you not have ripened red chili means use ordinary green chili, but the taste with definitely vary. And the remaining ingredients are easily available ingredients only. Usually maida and cornflour combinations are used in many dishes. With that I used rice flour to increase little crunchiness. Ingredients :

Vazhakkai | Raw Banana - 1 no
Ginger - 1 "
Garlic - 2 to 3 cloves
Ripe Red Chili - 1 no
Asafoetida - 1\4 tsp
Coriander Leaves - 3 stk
Curry Leaves - 2 stk
Maida - 3 tbsp
Cornflour - 3 tbsp
Rice Flour - 3 tbsp
Pepper - 1\2 tsp to 1 tsp
Salt To Taste
Oil - 1 tsp + required

Method :

Peel off the vazhakkai skin and cut into sticks like fingers and immerse into the water to avoid discoloration. Then half cook the vazhakkai with water and some salt. Drain the water and cool them.
To make the masala, grind the ginger, garlic, red chili, asafoetida, coriander leaves, curry leaves and two teaspoon of oil (+ or -) into paste.
Marinate the half boiled vazhakkai with the ground paste for about ten minutes.
Separately mix the maida, cornflour, rice flour and required salt. Dust the marinated vazhakkai fingers on the flour mixture, shake out the excess flour and deep fry in the oil till golden color.

Notes :

Don't over cook the vazhakkai else it will turns soft and easily break. Use only oil to grind the masala, don't use water. Also dust the marinated vaahakkai with flour and deep fry it immediately. Also deep fry the vazhakkai in small batches to cook evenly. Serve the fried vazhakkai fingers while hot else it turns soft. If you not have ripe chili means use ordinary green chili, but the taste will vary little.

First peel off the vazhakkai skin and cut into fingers size, then immerse in the water to avoid discoloration. Half cook the vazhakkai with two to three cups of water and some salt. Drain the water and cool the vazhakkai. Meantime, to make the masala, grind the ginger, garlic, chili, asafoetida, coriander leaves, curry leaves and oil in to paste. If required use more oil to make paste and don't use water.

Marinate the half cook vazhakkai with the ground paste for ten minutes. Heat enough oil in a kadhai. Separately mix the maida, cornflour, rice flour, pepper and some salt. Dust the marinated vazhakkai on the flour and shake out the excess flour. After that deep fry in the hot oil till it turns golden colour in small batches. Serve hot.
