Egg Rice | Muttai Sadam | How To Make Muttai Sadam - Its a good option for lunch or dinner. I feel its tasty than biryani. I learnt this egg rice recipe from my friend. Its easy as well as tasty and delicious. First cook the rice with spices, then make egg masala and mix both, that's all. Its not a scrambled egg rice method. Ingredients :

Basmathi Rice - 1 cup
Cinnamon Stick - 2"
Cardamoms - 2 nos
Star Anise - 1 no
Cloves - 3 nos
Bay Leaf - 1 no
Oil - 1 tsp
Salt - 1 tsp
Oil - 2 tsp
Ghee - 2 tsp
Cinnamon Stick - 2 "
Fennel Seeds - 1\2 tsp
Cloves - 3 nos
Onion - 1 no (sliced)
Curry Leaves - 1 stk
Green Chilies - 2 nos
Crushed Ginger Garlic - 1 tbsp
Tomato - 2 nos (medium size, 1"cut)
Red Chili Powder - 1 tsp
Turmeric Powder - 1\4 tsp
Salt - as required
Coriander Leaves - 1\4 cup
Mint Leaves - 1\4 cup
Oil - 1 tsp
Eggs - 4 nos
Salt - as required
Method :
Preparation, wash and soak the basmathi rice for about thirty minutes.
To cook the rice, heat five to six cups of water, add the cinnamon stick, cardamoms, star anise, cloves, bay leaf, oil and salt. Add the soaked basmathi rice and cook them. Drain the water and keep aside.
To make the egg rice, heat the oil and ghee in a kadhai, add the cinnamon stick, fennel seeds, cloves, onion, curry leaves and green chili, saute until the onion turns slightly golden colour. Add the ginger garlic, saute until its raw smell leaves. Then add the tomato and saute until its turn soft. Add the red chili powder, turmeric powder and required salt, mix well. After that add the coriander leaves and mint leaves, saute few seconds.
Make well in the center, heat some oil, add the eggs and required salt for eggs, mix and half cook them. Then add the cooked basmathi rice, mix well to coat the eggs and cook until the eggs cook fully. And the egg rice is ready.
