Recipe :

Nellikai Squash | Homemade Nellikai Squash | How To Make Pulpy Amla Squash

Ingredients :

Nellikai | Amla - 300 gm (12 to 13 nos)
Sugar - 3 and 1\2 cups
Lemon Juice - 1\2 cup
Method :
Pressure cook the nellikai with one and half cup of water for 1 whistle over high flame and ten minutes over low flame. When all the steam has released, open the pan and cool them completely.
Remove the seeds from the nellikai and grind into fine paste. Keep aside.
To make the squash, in the same pressure cooker pan, heat 1 and 1\2 cup of water and sugar. Cook till the sugar dissolved completely.
Add the ground nellikai paste, mix well. Boil for about one minute.
Turn off the flame and then add the lemon juice, mix well. Nellikai squash is ready.
To make the nellikari squash, mix quarter cup of nellikai squash and 3\4 cup of water with some ice cubes. Serve chill.
Notes: U can also adjust the sugar and lemon juice as per your taste. Syrup consistency is not required, to avoid crystallization. Can refrigerate up to one month.
