Varagu Arisi Siru Thaniyam Brinji | Kodo Millet Rice Brinji recipe is made from mixed vegetables of carrot and beans, button mushrooms, sweet corn, coconut milk, spices and simple ingredients, in a easy pressure cooking method, with easy step by step instruction and images. Follow the recipe as below...

Ingredients :

varagu brinji
Varagu Arisi \ Kodo Millet Rice - 1 and 1/2 cup
Cinnamon Stick - 2" long
Cloves - 5 no
Cardamom - 2 no
Star Anise - 1 no
Bay Leaf - 2 no
Fennel Seeds - 1\2 tsp
Onion - 1 no (sliced)
Curry Leaves - 2 stk
Tomato - 2 no (chopped)
Ginger Garlic Paste - 1 tsp
Green Chili - 2 no
Carrot - 1/2 cup (chopped, 1/4" thickness)
Beans - 1/2 cup (chopped, 1" long)
Mushrooms - 1/2 cup (sliced into 4 pieces)
Sweet Corn - 1/2 cup
Red Chili Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Coriander Leaves - 2 tbsp (chopped)
Mint Leaves - 2 tbsp (chopped)
Coconut Milk - 3 cup (1/2 no)
Oil - 1 tbsp
Ghee - 2 tbsp
Salt to Taste.

Method :

Preparation :

  • Wash and soak the varagu arisi for 15mins and keep aside. (Image 1)

Steps To Make The Varagu Arisi Brinji | Kodo Millet Rice Brinji :

  • In a pressure cooker pan, heat the oil and ghee together, then roast the cinnamon stick, cloves, cardamom, star anise, bay leaf and fennel seeds. (Image 2)
  • Add in the onion and curry leaves, saute till the onion turns golden colour. (Image 3)
  • Add in the tomato and green chili, cook till the tomato turns tender. (Image 4)
  • Add in the carrot and beans, cook for about two minutes. (Image 5) 
  • Then add in the mushroom and corn, cook for an minutes. (Image 6)

  • Add in the red chili powder, turmeric powder and required salt, stir for few seconds. (Image 7)
  • Stir in the mint leaves and coriander leaves for few seconds. (Image 8)
  • Add in the soaked varagu arisi (water drained) and mix well. (Image 9)
  • Finally add in the coconut milk, mix well and bring to boil. (Image 10)
  • Close the lid and pressure cook for 1 whistle and 5 minutes over simmer. When all the steam has escaped, open the pan, mix gently and ready to serve. (Image 11 and 12)
