Ingredients :

Egg - 6 no
Cloves - 2 + 2
Cinnamon Stick - 2 inch + 2 inch
Cumin Seeds - 1 tsp
Fennel Seeds - 1 tsp
Pepper - 1 tsp
Dry Red Chilli Powder - 4 no
Shallots \ Sambar Onion - 1/3 cup + 1/4 cup (chopped)
Green Chilli - 2 no
Tomato - 1 no
Cashew-nuts - 15 no
Star Anise - 1 no
Garlic - 10 to 12 no
Curry Leaves - 1 stk
Coriander Leaves - 2 tbsp
Oil - 1 tbsp + 2 tbsp
Salt to Taste.

Method :

Steps To Make The Egg Curry :

  • First boil the five eggs with required water for 5 to 7minutes. Then cool completely and de-shell the eggs one by one, slice them and keep aside. (Image 1 and 2)

  • To make hot and spicy masala for the egg curry, dry roast the cloves, cinnamon stick, cumin seeds, fennel seeds, pepper and dry red chilli altogether in a hot kadhai \ pan. Also making sure that they doesn't get burnt but they are well roasted. (Image 3)
  • Then cool completely and grind into powder, keep aside. (Image 4 and 5)

  • Separately, saute the shallots and green chilli with a tablespoon of hot oil until golden colour. (Image 6)
  • Add in the tomatoes and cashews, cook till the tomatoes turn tender. (Image 7 and 8)
  • Then cool the cashew mixture and grind into fine paste, keep aside. (Image 9 and 10)

  • To make the egg curry, heat two tablespoon of oil in a kadhai \ pan, roast the cloves, cinnamon stick and star anise. Then stir in the shallots, garlic and green chilli till the shallots turn translucent. (Image 11)
  • Add the ground cashew-mixture paste, roasted masala powder and required salt, mix well and saute for few seconds. (Image 12)
  • Add two cups of water, mix well, bring to boil and cook for two to three minutes (Image 13)
  • Crack one egg into the boil curry, stir little gently and again cook for two minutes. (Image 14)
  • Then add in the sliced hard boiled egg and again cook for two minutes. (Image 15)
  • Finally add the coriander leaves and ready to serve. (Image 16)

Serving Suggestion : Serve hot with White Rice, Idli, Dosai or Chappathi.
